Blueberry Dessert

In Hood River, Martha, knowing my crazed addiction to blueberries*, showed me how to make the most delicious treat from them! Rinse and put them in a microwavable safe bowl, sprinkle generously with sugar and microwave until the blueberries just pop and warm (a few minutes). Eat warm or put in the freezer for a frozen slushy-like treat. I certainly ate enough to turn into a blueberry (which is what I tell my kids when they eat too much of a good thing)!

Martha, with the gift of mercy and hospitality, wrote a gorgeous cookbook of recipes she shared with us in Hood River. She gracious enough to allow me to share (and modify slightly) this addictive recipe for yet another blueberry splurge.

Martha's Blueberry Dessert
Mix together-
2 cups graham cracker crumbs
1 stick unsalted butter, melted
1 tablespoon cold water
¼ cup sugar
Spread this mixture in a 9 by 13 inch pan

In a separate bowl combine-
1 and ½ large packages of cream cheese, softened to room temperature
1 cup powdered sugar
5 tablespoons milk
Spread this mixture over the crumb crust
Top with 16oz of microwaved blueberries (*recipe above), **whipped cream, and sprinkle the top with some more graham cracker crumbs. Chill and serve.

**Whipped Cream
1 cup heavy whipping cream
2 Tablespoons confectioners sugar
2 Tablespoons vanilla
Whip cream in a chilled bowl few minutes, then add sugar and vanilla and whip again until stiff peaks form.
